
Calypso Rum Squares
*All ingredients must be room temperature
- 1 cup June's Mince Fruit
- 1 sticks of butter
- 1/2 cup sugar
- 2 eggs
- 1 cups flour
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tbsp each of grated lime, lemon and orange Zest
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
Directions
-Grease your (9x13) oblong baking pan
*Preheat oven 350 degrees F
- In bowl: Mix butter, sugar, egg, flour, baking powder
- Add extracts/essence and Zest; mix
- Add June's Mince Fruit ingredient; spoon mix
*Bake at 325 degrees for about 30-35 minutes or until inserted knife comes out clean.
*Cheesecake topping
- 2 8oz cream cheese
- 1 cup powdered sugar
- 2 tsp lemon Juice
- 1 tsp vanilla extract
- 1 tsp rum (optional)
- 1/3 cup sour cream
- 1 1/2 cup whipping cream
- Blend cream cheese and powder sugar
- Add lemon juice, extracts, and sour cream
- Mix until smooth
- In separate bowl: Mix heavy whipping cream until stiff
- Fold in the whipping cream to the blended cream cheese
- Stir but do not over mix
*Poke holes in the baked cake and with a basting brush apply rum
*Then pour in your cream cheese mixture and spread evenly
*Place in fridge overnight and allow to set.
