Calypso Rum Squares

*All ingredients must be room temperature

  • 1 cup June's Mince Fruit
  • 1 sticks of butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 cups flour
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg 
  • 1 tbsp each of grated lime, lemon and orange Zest  
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract

 Directions

-Grease your (9x13) oblong baking pan

*Preheat oven 350 degrees F

  1. In bowl: Mix butter, sugar, egg, flour, baking powder
  2. Add extracts/essence and Zest; mix
  3. Add June's Mince Fruit ingredient; spoon mix

*Bake at 325 degrees for about 30-35 minutes or until inserted knife comes out clean.

 *Cheesecake topping

  • 2 8oz cream cheese
  • 1 cup powdered sugar
  • 2 tsp lemon Juice
  • 1 tsp vanilla extract
  • 1 tsp rum (optional)
  • 1/3 cup sour cream
  • 1 1/2 cup whipping cream
  1. Blend cream cheese and powder sugar
  2. Add lemon juice, extracts, and sour cream
  3. Mix until smooth
  4. In separate bowl: Mix heavy whipping cream until stiff 
  5. Fold in the whipping cream to the blended cream cheese
  6. Stir but do not over mix

*Poke holes in the baked cake and with a basting brush apply rum

*Then pour in your cream cheese mixture and spread evenly

*Place in fridge overnight and allow to set.
