Calypso Shots

*All ingredients must be room temperature

  • 2 cups of June's Mince Fruit
  • 2 sticks of butter
  • 1 cup sugar
  • 3 eggs
  • 2 cups flour
  • 3 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp nutmeg 
  • 1 tbsp each of grated lime, lemon and orange Zest  
  • 1 tsp almond extract
  • 1 tsp vanilla extract

Cheesecake Mix

  • 2 8oz blocks cream cheese
  • 1/2c sugar
  • 2 eggs
  • 1 tsp vanilla extract/essence
  • 1 tbsp lemon juice
  • 2 tbsp of flour
  • 1/3 sour cream

 Directions

*Grease mini cupcake pan 

*Preheat oven 350 degrees F

  1. Mix butter and sugar until creamy
  2. Mix eggs one at a time to the creamy mixture
  3. Add the Zest
  4. In a separate bowl: Sift flour and baking powder 
  5. Combine flour and baking powder to the butter, eggs and sugar mixture
  6. Add essence and spices to mixture
  7. Add Junes Mince Fruit 

Cheese cake mixture (in separate bowl)

  1. Mix until combined: cream cheese and sugar
  2. Mix in eggs, one at a time 
  3. Add essence, lemon juice and flour: Mix
  4. Add sour cream: Mix

Do not over mix

Pour cake into mini cake pan then pour cheesecake mixture on top

*Bake at 325 degrees for about 30-35 minutes or until inserted knife comes out clean
