
Caribbean Christmas Cake
*All ingredients must be room temperature
- 2-3 cups of June's Mince Fruit (depends on how fruity you want your cake)
- 2 sticks of butter
- 1 cup sugar
- 3 eggs
- 2 cups flour
- 3 tsp baking powder
- 2 tsp cinnamon
- 1 tsp nutmeg
- 2 tbsp each of grated lime, lemon and orange Zest
- 1 tsp almond extract
- 1 tsp vanilla extract
Directions
*Grease your (about 4: 9inch pans) baking pans or (1) Bundt pan
*Baking time may be less when using 9 inch pans
*Preheat oven 350 degrees F
- Mix butter and sugar until creamy
- Mix eggs one at a time to the creamy mixture
- Add the Zest
- In a separate bowl: Sift flour and baking powder
- Combine flour and baking powder to the butter, eggs and sugar mixture
- Add essence and spices to mixture
- Add Junes Mince Fruit
*(Bundt pan optional)
Bake at 325 degrees for about 60-75 minutes or until inserted knife comes out clean.
