June’s Mince Fruit Banana Bread with Cream Cheese Glaze

For the Banana Bread:

1 1/4 cups all purpose flour
 1 tsp. salt
 1 1/2 tsp baking soda
 1/2 cup vegetable oil
3/4 cup dark brown sugar
 2 eggs
2 overripe bananas, mashed
1/2 cup @tobagotrin June’s Mince Fruit
2 TB cinnamon-sugar

DIRECTIONS:
Preheat oven to 350ªF. Spray a 9” x 5” standard loaf pans with non stick spray and line with parchment paper. Sift together flour, salt and baking soda. In a large mixing bowl use a whisk to combine oil and sugar; add eggs, one at a time; mixing well. Blend in bananas, and June’s Mince Fruit. Add flour mixture gradually to creamed mixture. Pour into prepared pan and sprinkle with cinnamon-sugar. Bake for 1 hour or until toothpick inserted comes out mostly clean with a few moist crumbs.

For the Cream Cheese Glaze

4 ounces block-style cream cheese, softened 4 TB unsalted butter, room temperature
1 tsp vanilla extract
1 cup powdered sugar
 2-3 tablespoons milk

DIRECTIONS:
Best together cream cheese and butter with a hand or stand mixer until smooth. Then beat in vanilla and powdered sugar. Add milk a TB at a time until the glaze is thick and pourable. Spread over cooled banana bread.

Store finished banana bread in the refrigerator
