*All ingredients must be room temperature
- 2 cups of June's Mince Fruit
- 2 sticks of butter
- 1 cup sugar
- 3 eggs
- 2 cups flour
- 3 tsp baking powder
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 tbsp each of grated lime, lemon and orange Zest
- 1 tsp almond extract
- 1 tsp vanilla extract
Cheesecake Mix
- 2 8oz blocks cream cheese
- 1/2c sugar
- 2 eggs
- 1 tsp vanilla extract/essence
- 1 tbsp lemon juice
- 2 tbsp of flour
- 1/3 sour cream
Directions
*Grease mini cupcake pan
*Preheat oven 350 degrees F
- Mix butter and sugar until creamy
- Mix eggs one at a time to the creamy mixture
- Add the Zest
- In a separate bowl: Sift flour and baking powder
- Combine flour and baking powder to the butter, eggs and sugar mixture
- Add essence and spices to mixture
- Add Junes Mince Fruit
Cheese cake mixture (in separate bowl)
- Mix until combined: cream cheese and sugar
- Mix in eggs, one at a time
- Add essence, lemon juice and flour: Mix
- Add sour cream: Mix
Do not over mix
Pour cake into mini cake pan then pour cheesecake mixture on top
*Bake at 325 degrees for about 30-35 minutes or until inserted knife comes out clean
